I took this recipe for caramelized bread and butter pudding out of my mum's recipe diary; it's a favorite for cooler months although she would make it year round.

Ingredients:
- 20 medium white bread slices, crusts cut off
- 30 g raisins
- 30 g sultanas
- 200 g sugar, plus extra for the caramelized topping
- 1 vanilla sugar or few drops of vanilla extract
- 10 egg yolks
- 50 g butter
- 100 ml low fat milk
- Grated nutmeg

Instructions:
- Preheat the oven to 200°C. Grease a 1.5 liter pudding dish/basin with Butter.
- Split the vanilla pod and place in a saucepan with the cream and milk and bring to the boil.
- While the mixture of vanilla pod, cream and milk is heating, whisk together the egg yolks (one in a time) and sugar in a bowl. Allow the cream mixture to cool a little and, then strain it onto the egg yolks, stirring all the time. You now have prepared the custard.
- Spread the bread evenly with 40g Butter. Cut the bread into triangular quarters or halves, and arrange in the dish in three layers, sprinkling the fruit and a little grating of nutmeg between the two layers and leaving the top clear.
- Pour over the warm custard, lightly pressing the bread to help it soak in, and leave it to stand for at least half hour before cooking to ensure that the bread absorbs all the custard.
- You can prepare the butter pudding to this stage several hours in advance and cook it when needed.
- Remove the pudding from the water bath, sprinkle it with sugar and glaze on a medium heat or with a gas gun to a crunchy golden finish.
- The sugar dissolves and caramelizes when glazing and you may find that the corners of the bread will begin to burn. The “burning” of the bread will improve the flavor, giving a bittersweet taste that mellows when it is eaten with the rich custard, which seeps out of the wonderful bread sponge when you cut into it.
- This c is delicious and although some include sultanas - I've left these out because I don't like them. If you decide to add sultanas- sprinkle them in-between the bread before you pour the mixture.
- This decadent dish is perfect for Sunday lunch or dinner when family is gathered together. Enjoy!
